Yeah, I vaguely remember that e31 had a V12 option. However it also had a V8 option and I would rather go with that, because they had one of the best engines BMW ever made and honestly probably the only BMW engine I'd realistically be ever interested in (besides their modern I6 which is basically a better, modern, better flowing 2JZ except also full of electronics and shit, so a nightmare probably to work with let alone outside of it's native chassis), because you can make BIG power with that V8 and it's old enough to be able to work on it and tune it, basically up until the modern era it was the best engine they ever made and arguably in many ways still is.
Besides those I mentioned I'm also very interested in e31 and e39 but those are a bit heavier cars. I'd love to have e39 for example, but with the huge engine bay I'd rather do something stupid with it like crate V10 for mega bucks and then, yeah, just not a project I have the money for. and would be heavy anyway, so who cares, gotta make something fun for starters.
I do have one car volvo S60 T5 with a volvo inline 5 that with the current exaust, intercooler, pump, turbo and injectors can make north of 400hp, but that project is a dead end other than to enjoy it for what it is and leave pretty much as is... So would be great to build something lighter, something closer to 700-800 hp and something RWD for gods sake, not that FWD ain't fun, but I'm always itching since I sold 2002 lexus IS200, very nice handling car, but was totally stock. Even those are getting some of the JDM tax nowadays, things are so stupid in this world.
